Vegetable Medley Recipe
Serves 4-6
Ingredients
2 tablespoons olive oil
1 onion thinly sliced
½ cup okra medium diced
1 cup fresh corn
½ cup yellow squash thinly sliced
½ cup zucchini squash thinly sliced
1 cup roma tomatoes medium diced
2 tablespoons freshly chopped basil
1 tablespoons Spice Delight All-Purpose Essence
2 cups pasta sauce (your favorite brand)
Method
1. In a large skillet over medium high heat, add oil and the next three ingredients listed above.
2. Sauté for 5 minutes.
3. Add remainder of ingredients, and turn down heat to a simmer.
4. Cook veggies for 15 to 20 until okra is tender.
